Butter Cookie Recipe



Regarding to cookies and cakes, I was spoiled by my mother who baked great cookies and cakes and other sweet treats. Honestly living in the US, I always miss her treats and just can’t find anything like hers. Most cookies I find usually are too sweet, thus plain for my taste.

Since I can’t find it then I have to make it myself. Here I’d like to share a butter cookie recipe I used, thanks to my Pastor’s wife who kindly shared it with me. I love the cookie from this recipe because it’s not too sweet, it’s crunchy (from the cornstarch that makes cookie crisp) and the butter flavor is just great, it fills your mouth. Once you taste it, other cookies will never be the same (means too bland).

This butter cookie  recipe is a basic simple one that you can use with cookie press or cookie cutters. I don’t like icing so I use round sprinkles to make it a little attractive. Ingredients:

  • 200 gr Butter or Margarine (optional : substitute 80 gr with Australian, Dutch or New Zealand Butter for much better flavor)
  • 150 gr Sugar Powder (granulated sugar is okay if you don’t have powder sugar)
  • 4 Egg Yolks
  • 200 gr Flour
  • 100 gr Cornstarch
  • a few drop of Vanilla
  • Sprinkles (optional)
  • 1 Egg Yolk beaten (optional)

Baking Yummy Butter Cookies

  1. Mix together butter and sugar until it becomes white (about 15 minutes).
  2. With lower speed, put in egg yolks one by one.
  3. Mix together flour and cornstarch. Pour in little by little this flour into the dough until they all blend well. Stop at this step. You can decide to use cookie press or cookie cutters. If you use cookie press then the dough is ready to use. If you find it too sticky, add a little flour.
  4. Since I want to use cookie cutters,  I need to add more flour to make the dough harder so it’s easier to work with the cookie cutters.  How much flour to add? It’s absolutely up to you. Just add until it’s about right to flatten and not sticky to your rolling pin.

  5. With cookie cutters, shape your cookies and arrange them on the baking sheets.

  6. If you want to use some sprinkles, brush the cookies on the sheet with egg yolk. Sprinkle some sprinkles 🙂

  7. Bake in the oven with 360 degree F until they’re lightly brown underneath.
  8. Wait to cool down before eating.

I use Norpro 3301 Deluxe Cookie Press that I bought from Amazon and like it. Most parts are from metal and sturdy. Made in Italy.

Pukis – A little Twist to Pancake Mix Recipe

I make a little twist to the pancake mix and create this easy and yummy ‘Pukis’ recipe. Great for breakfast or anytime snacks. It doesn’t need a long time to make but gone very quickly in my family.

Pukis is one of popular snacks from Indonesia. It’s like a pancake, only baked in a ship like shape. Delicious and tasty – often with fillings such as raisin, cheese, chocolate sprinkles and fruits.

Originally, Pukis is made from a totally different recipe than Pancake. But since I have a big bag of Krustaez Pancake Mix from Costco I need to finish and don’t want the hassle to make Pukis from the scratch, so I’ll just use this pancake mix with a little twist to its recipe.

To cook this you need an iron-cast mold for cooking on the stove. Pukis mold is not something you can find here in the US. But you can use any iron cast mold such as Danish Pancake Pan or Takoyaki Pan. Also you need a cover for your pancake mold to keep the heat inside.

Pukis – Pancake Mix Recipe

Ingredients

  • 2 cups Pancake Mix
  • 1/2 cup Sugar
  • 1 box (200 ml) Kara Coconut Milk
  • 1 cup cold Water
  • 1 tbs butter or margarine, heated for the mold
  • Filling (optional): raisin or chocolate sprinkles, cheese sticks, or anything you like.

How to make:

1. Mix pancake mix, coconut milk, water, sugar in a big bowl with a big wide spoon or spatula. Mix until all ingredients blend well. Press any big lump against the bowl to break it apart. The pancake batter doesn’t have to be perfectly smooth. If there are only just tiny small lumps and it’s mixed well then I would stop mixing.

2. Heat up the pukis mold on the stove with medium heat. When it’s warm, brush the mold with the liquid margarine and a little baking brush so the batter won’t stick.

3. Fill up every cups in the mold with the batter up to 3/4 of the height.

4. Scatter some raisins (or any filling you want) on top of the batter.

5. Close the mold and let it cooked until it’s brown on the bottom. Remove them and put on the plate.

Tips : If it’s burned too fast then let down the heat a bit.
One recipe makes about 25 pukis pancakes. You can store the leftover in the fridge for later time.
